PROBLEM

It is estimated that around 1/3 of the food produced goes directly to waste. Of this, about 50% are fruits and vegetables, totaling losses of approximately 1.3 billion tons of food and economic losses exceeding 990 billion dollars.

This contrasts with the sustained population growth in recent years and the projections regarding food demand, which is expected to increase by about 70% by 2050.

To feed the nearly 10 billion people estimated globally by 2050, we will need to increase food production by about 70%, meaning countries will have to allocate enormous volumes of resources to produce more with less.

SOLUTION

We are currently developing an edible nanocoating based on biodegradable nanoparticles that are safe for human consumption, capable of extending the shelf life of fruits and vegetables, and preventing their colonization by foodborne pathogens that directly affect their longevity.

The industrial process involves obtaining a broccoli extract enriched with antimicrobial agents formulated in organic nanocapsules.

The nanocoating consists of chitosan nanoparticles encapsulating functional compounds that are continuously released on the surface of fruits and vegetables to delay ripening and prevent colonization by pathogenic microorganisms.

IMPACT

We aim to significantly reduce the waste of fruits and vegetables by extending their shelf life. Our primary impact is related to reducing food waste and the enormous environmental, social, and economic impact it has on the population.
